Avocado Lovers, Rejoice! My Top 3 Avocado Toast Ideas

This post is part of a paid spokesmanship for ALDI. All opinions are my own.

Avocado is my favorite food ever. My love affair with avocado runs so deep, I even have a jingle for it. It goes a little like this: “Avocado girl, avocado world. Avocado. Avocado. Ah, ah, ah, yeah. Oh, ooo, oh.” It’s a whole thing, dance moves and all.

One of the easiest ways I eat avocado, other than straight out of the skin, is on toast as a quick and delicious snack. Since I enjoy minimalist cooking and meal prepping, I usually just spread the avocado on toast and call it a meal. But, when I’m making it for someone else I like to top the toast with their favorite toppings.

As part of a spokesmanship with ALDI grocery retailers, I gathered a few avocado toast ideas that serve as quick, delicious, and healthy meal options for any time of day. There’s one with crumbled cheese, tomatoes and spinach, and last but not least a chili flakes and crumbled pistachios option – because I’m Mexican and always need a spicy option of everything!

Below I listed all the ingredients for each of the three options because, obviously, I want you to try all three and let me know what you think!

My Top 3 Avocado Toast Ideas

Serves: 1 Prep Time: 10

Ingredients

  • 3 pieces of bread
  • 1 ripe avocado
  • 2 tablespoons olive oil
  • chile pepper flakes (crushed red pepper)
  • salt
  • 2 tablespoons chopped pistachios
  • ALDI Specially Selected Hand-Crafted Cheese
  • cherry tomatoes
  • handful of spinach

Instructions

Toast the bread. Separate the avocado by slicing lengthwise all the way around; twist to separate, and then remove and discard the pit.

When toast is ready, spread half the avocado on one slice by scooping the fruit out of the peel with a spoon. Repeat with the second slice of bread.

Option 1) Drizzle with olive oil, and sprinkle with salt and chile pepper flakes to taste. Top with pistachios.

Option 2) Grate cheese over avocado toast to taste.

Option 3) Chop cherry tomatoes in half, or slices. Slightly cop spinach. Place spinach over avocado, followed by tomatoes.
